I found this yummy-looking baked oatmeal recipe on a blog I stumbled upon tonight called Salt and Chocolate. I was googling “Kids Kitchen Takeover”, a very 70’s kids cookbook I had when I was growing up, and it led me to this blog written by a woman named Mary Beth who is a mom/stepmom of 5 kids, grows her own tomatoes, makes her own baby food, beautifully crafted gifts and birthday crowns, and takes the time to appreciate life’s simple pleasures. She even takes lovely photos of her hot lemon drink and view from the couch when she’s sick! So really, this post is not so much about the oatmeal, but more about taking a break from your busy life to read about the world of another interesting mom at Salt and Chocolate! (Although I do plan to make the baked oatmeal this weekend!)
