Cactus Candy

Gary and I celebrated our 10 year anniversary last week. My parents had the kids over for a sleepover (thank you Mom and Dad!) while we had a little “staycation” at a resort a few miles away. It’s kind of fun to have people thinking you’re a tourist and explaining all about Arizona and the weather, places to visit, the cactus…

Speaking of cactus, the blooms are popping open all over our neighborhood — big bright flowers on the prickly pear, ocotillo, cholla and saguaro. I had forgotten how pretty the desert was in spring.

Maybe it was all those blooms that inspired us to buy a box of cactus candy to take home to the kids from the hotel gift shop. I remember eating this as a kid and absolutely loving it. If you like sweet gummy candy like Dots and gumdrops, you’ll love this stuff. The box says it’s made with “delicious prickly pear cactus”, and from the taste of it, with a whole lot of delicious sugar too. I read somewhere that this tastes great cold out of the fridge. I’ll have to try that with the few remaining squares. I have to keep reminding myself we got this for the kids!
