We’re having a Mother’s Day Tea in my son’s preschool class on Thursday. I signed up to bring “two small platters of fancy peanut butter and jelly sandwiches”. I’m considering making these, which are technically peanut butter and jelly ice cream sandwiches. I know, I know. It probably doesn’t meet the healthy food requirement, but they just look so darn good. Maybe if I did one platter of these, and one platter of organic peanut butter and no-sugar-added jelly on whole grain bread, it would all even out?

    These seem perfectly healthy to me. You just need to reposition them as “chilled protein and calcium bites”. Of course, don’t say that to the kids!
    Skip the whole wheat organic pb&j fancy sammies. You serve those and the kids will think you’re the kinda mom who gives out boxes of raisins for Halloween! SCARY!!!

    these sound yummy! i would go for whole wheat and organic, the kids will still love them and they will be healthy!

    I made both. Lots of plain pb&j sammies on bread left over, but the ice cream sandwiches were all gobbled up by kids AND moms. Yum.
