Fresh Mozzarella Salad

Here’s a picture of the dish I brought to a potluck I went to tonight. It’s one of my new favorites. I got the recipe from the Whole Foods website, which has a TON of yummy looking recipes including kid-friendly ones. I have since made it three times, simplifying it more each time. Now here’s what I do:

Cut 8 oz of fresh mozzarella cheese into bite size chunks, cut 16 oz of grape tomatoes in half, cut two avocados into bite size chunks, rub 4 corn cobs with olive oil and cook them on a baking sheet in the oven on 450 degrees for 10 minutes on each side, cut off the corn kernels into the bowl with the mozzarella, avocados and tomatoes, add fresh ground salt and pepper. That’s it! It’s so fresh tasting and delicious. It is a bit summery, but I think it’s nice to eat light in winter. Especially when I’m wearing my new jeans!

    They sell the little mozzarella balls at Trader Joe’s and I just cut them in half. I’m happy to hear you’re going to make it!
