sneaky spaghetti and other real meals
I’ve made real dinners three nights this week. And by real, I mean it wasn’t mac n cheese, or a cheese crisp, or something frozen from Trader Joe’s that I poured into a pan and heated up. And they’ve all gotten rave reviews. The first was a spicy sausage penne recipe from Stephmodo (okay the grown-ups ate this while the kids got cheese crisp since it was too spicy). My dad told me he loved it about 10 times. The second was this easy chicken enchilada recipe that everybody including the kids gobbled up.
Tonight’s diner was my own creation. I cooked zucchini and mushrooms in a pan with a little butter, pureed them in the blender with a splash of milk, then put them back on low heat and melted in some mozzarella and parmesan cheese. Voila - a sauce for spaghetti noodles that my kids gobbled up without realizing how many fresh vegetables they were eating. I’ve kind of been against the sneaky chef/deceptively delicious method of cooking, because I want my kids to learn to eat vegetables and know that they’re eating them. But this was so much more fun than forcing them to eat three bites of zucchini. I served the sneaky spaghetti with this avocado/corn/mozzarella/avocado salad - my favorite.

GO LAINS! You truly are a ROCKSTAR MOMMA!!! We’re totally going to try these recipes! While Michael is the chef in our house, he loves it when I find new ideas! Okay, so we did the baked ziti recipe on Sunday and it was YUMMO! Michael has made similar baked ziti’s before, but the addition of the pesto, spinach and the cubes of mozzarella were so tasty!!! Thanks for the great recipe, Lains! Oh and you have always been a ROCKSTAR MOMMA, but come on, ALL of these amazing “fun finds” each and every day, now if that doesn’t qualify you for ROCKSTAR status then I’m not sure what would!!!
