What to do with all those fresh strawberries?

I bought a huge tub of fresh strawberries at Costco last week and wasn’t sure how our family of four was going to eat them all before they spoiled. Fortunately, it was Strawberry Week over at Design Crush, where I got the idea to make these strawberry tarts. They looked pretty and tasted okay, but were not completely delicious. Although the kids did have fun rolling out their dough balls, and I got to “crimp” dough for the first time. So it wasn’t a total loss!

Then I remembered eating a fruit crumble at our friends’ house in Montana many years ago. So I found this recipe, and made the most mouth-wateringly delicious strawberry crumble. I served it with vanilla ice cream and it really was amazing. So good in fact, that I had to drive the leftovers over to my mom and dad’s house for a little Father’s Day surprise.

    I also buy the jumbo flat of strawberries at Costco and I am now excited to have a new recipe to try! And I’m so excited that the Strawberry Crumble is egg-free, as I am always on the lookout for any dessert that I can serve to my egg-allergic little one! Thanks for the idea!

    Mmmmmm!!! I’d love to make this one with our strawberries from the garden,
    but unfortunately the crows (or perhaps the cats or racoons? Who would know)
    seem to have gotten most of the crop this year. Guess I’ll have to go with the
    store-bought!! Glad yours turned out so well… ;)
